Pinterest Find: Three-Ingredient Low-Fat Orange Creamsicle Cake

It’s another installment of “I love to cook and bake, but don’t love recipes with tons of ingredients that yield tons of work!” 🙂 OK, so the series isn’t really called that, but it definitely could since my most recent recipes seem to follow that trend. I can’t hide it…I love a good recipe with minimal ingredients and minimal work! As a stay-at-home-mom, business owner and person that likes as much down time with my family as possible, do you blame me? So here ya go…another easy peesy Pinterest find recipe…and it’s low-fat! 🙂

Three-Ingredient Low-Fat Orange Creamsicle Cake

INGREDIENTS

1 box of white cake mix (I used Pillsbury)
1 cup of orange juice
1 6oz. container of plain, non-fat Greek yogurt

INSTRUCTIONS

1. Mix cake mix, orange juice and yogurt thoroughly in a large mixing bowl (should take a few minutes if you do it by hand).
2. Pour into greased 8×8 pan or dish.
3. Bake at 350 for 30-33 minutes.

BAM. DONE. Three ingredients and three instructions. 🙂

FINAL REVIEW: This cake is delicious! The texture is a bit more dense than a regular box cake, but it’s super moist. I was afraid there’d be too much orange flavor, but I think it’s just enough and definitely doesn’t overpower. I tested this out at our MOPS meeting this morning (pictured above) and it was a hit! You can add powdered sugar for a little extra sweetness, but I think it’s fine without it. Definitely one of the easiest, most delicious cakes I’ve ever made! I might try apple juice instead of orange juice and add some cinnamon next time. 🙂

The best decision I could have made for my wedding was hiring Jessica Fike as a photographer!
