Pinterest Find: Taco Balls

We have tacos about once a week because Brian loves them and because they’re pretty easy. And if you know me and have been following my recipes for a while (see all my recipe posts by clicking on the “categories” tab at the top of the blog, then choose “recipes” after you’re redirected to the categories at the blog footer), you know I like easy! But I don’t want to serve the same old tacos every week, so I’m always on the look out for a twist on the normal taco meal…and of course my curiosity takes me to Pinterest! I pinned this recipe a while ago…so long ago that I almost couldn’t find it among all my other food pins! I finally tried it last week and it was a decent success. Time to share! 🙂

Taco Balls

INGREDIENTS

1 package jumbo crescent rolls (I used big and flaky and they were fine)
3 oz. cream cheese
1/2 cup Mexican blend shredded cheese
3/4 cup cooked shredded or diced chicken
1/3 cup salsa
2 tsp enchilada or taco seasoning mix (I use my own blend of salt, pepper, cumin and chili powder)
1/4 cup Mexican blend shredded cheese for sprinkling

INSTRUCTIONS

  1. Preheat oven to 375° and line cookie sheet with foil and spray with no-stick spray.
  2. Place cream cheese and 1/2 cup Mexican cheese in small bowl and microwave for about 30-40 seconds to soften.
  3. Add seasoning mix, salsa and chicken to cheese mixture and stir until combined.
  4. Unroll and separate crescent rolls on prepared pan.
  5. Scoop 1 large tablespoon of chicken mixture into the center of the two short ends of the crescent roll.
  6. Pull outer corners (of short ends) of the crescent roll over the chicken mixture, then pull the long end over to completely enclose filling.
  7. Sprinkle tops with additional shredded Mexican cheese.
  8. Bake for 15 minutes, or until golden brown.

FINAL REVIEW: They weren’t the best tasting taco kind of food I’ve ever tasted, but they were super easy, they weren’t messy (to eat) and my husband ate four of them in one sitting! Overall, I found them to be tasty and think they would be pretty great as a super bowl party or tailgate item. I also think I might jazz them up next time with ground beef instead of chicken. If you’re a taco- or Mexican-lover and are looking for an easy, different way to present, give ’em a try!

The best decision I could have made for my wedding was hiring Jessica Fike as a photographer!
