It’s been a while since I’ve shared a Pinterest Find. I’ve been browsing Pinterest much more frequently these days looking for new recipes AND ideas for our new house. We’re still planning on moving in next month and I cannot wait to fill the home with colors, decor, furniture, love and the aroma of new Pinterest recipes…like this one…
(I also think this recipe is pretty appropriate right now since there’s a definite chill in the air and we’re only a week away from fall’s official start!)
Two-Ingredient Pumpkin Cake with Apple Cider Glaze
INGREDIENTS
For the cake:
1 box yellow cake mix
1 15 oz. can of pumpkin puree
For the glaze:
1 1/2 cups powdered sugar
3 tablespoons of apple cider
3/4 teaspoon pumpkin pie spice
INSTRUCTIONS
Empty contents of cake mix and pumpkin puree into a large bowl. Using a hand mixer or stand mixer beat until well mixed (the batter will be very thick, but will come together nicely).
Pour (really, you need to scoop it) batter into a greased 9×9 baking dish or pan. Bake at 350 degrees for 28-30 minutes or until a toothpick inserted in the center comes out clean. Do not overbake.
Let cool for 5-10 minutes in the pan, then flip onto a platter (I used the lid of a 9×13 pan).
Make the glaze while you’re waiting. Combine powdered sugar, apple cider and pumpkin pie spice in a small bowl. Glaze should be thick but pourable. Add more sugar or cider if needed. Pour over the cake while still warm. Reserve some to pour over each slice when served.
Serve warm or room temperature.
FINAL REVIEW: This cake was pretty good! I made it for my family while “camping out” at my childhood home this past week and it was gone in a few days! Everyone enjoyed it, even Ally. The pumpkin and apple flavors came together very nicely and the cake wasn’t super duper sweet (but sweet enough). I think the glaze was especially delicious and would probably do well on cookies, muffins or any other pumpkin-type pastry or dessert. The only downfall was the thickness of the batter and the somewhat too-moist center of the cake. All in all, an easy and crowd-pleasing cake!

We are not a stoic couple and did not want posed (or trying-too-hard) photos! Jessica was able to capture our personalities and the elegance of the day! I can't stop looking at our photos!

The best decision I could have made for my wedding was hiring Jessica Fike as a photographer! I was in a wedding prior that she was a photographer for and seeing how organized and easy and strategic she was to work with is what convinced me!
