get to know ME more!
Hi Thank you so much for visiting the blog! Whether you're looking for more pretty pictures, inspiration for your wedding day, or some useful Deep Creek info, I hope you'll find a comfy seat, maybe a cup of coffee, and read on!
If you love recipes that have minimal ingredients with minimal preparation, then you’re going to LOVE this cake! It’s another one of my Pinterest finds and I’ve already made it three times! It’s quick and easy, just like this blog post. 🙂
Two-Ingredient Pineapple Cake
INGREDIENTS
1 box of angel food cake mix
1-20 oz. can of crushed pineapple (in it’s own juice)
INSTRUCTIONS
1. Combine cake mix (do not add ingredients on back of box) and pineapple.
2. Mix in a large bowl and watch the batter expand and turn frothy!
3. Pour into a 13×9 cake pan (I greased the pan first, but I don’t think you need to).
4. bake at 350 for 30 minutes!
Easy-peesy, right?? Oh you gotta love it! Here’s a quick peek at the cake from my phone…
I know, not the prettiest picture, but there’s not a lot of detail to this cake and like I said above, this is a quick post! 🙂
FINAL REVIEW: This cake is a crowd-pleaser! People are usually excited to hear that it only contains two ingredients because it’s moist and tastes good! And because angel food cake is low in calories and fat, it’s not an unhealthy cake (big plus!). I originally thought it would be a good dessert, but I think it works better as breakfast or a snack. If I were to turn it into a dessert, I’d probably add some simple icing (powdered sugar + water or milk). I’m also wondering if this same concept would work with other canned fruits? Â If you’re looking for something quick and tasty, definitely give this cake a try!

Scenes and thoughts from deep creek
Well hey now! I thought for sure it had been more than seven months since I blogged last! Wish I could do it more…and plan to as soon as the new JFP website comes out.
I’m not sure I’m starting anything consistent here, just sharing some random thoughts and scenes from Deep Creek on this random Wednesday…

Jessica is amazing and she made us feel so comfortable! Having her capture our wedding was like having my best friend with me for every moment! Jessica's photos are fun, whimsical, and sophisticated!
We are not a stoic couple and did not want posed (or trying-too-hard) photos! Jessica was able to capture our personalities and the elegance of the day! I can't stop looking at our photos!

The best decision I could have made for my wedding was hiring Jessica Fike as a photographer! I was in a wedding prior that she was a photographer for and seeing how organized and easy and strategic she was to work with is what convinced me! She makes you feel so comfortable and helps teach you how to pose and smile and look so natural! She keeps you on schedule throughout your day and captures so much emotion in her photos. She is worth every penny plus more!

Hmmm… wonder if they make gluten free angel food cake? I need to investigate! This looks delicious!
Jess, do you add the juice from the fruit?
Hi Linda! Yes, you add the juice, too. No draining required. 🙂
