I LOVE peanut butter and chocolate together…ABSOLUTELY LOVE IT! I’ll choose that combination over any other when given a list of desserts or ice cream flavors. It’s such a sure bet and it’s simply delicious. 🙂
My latest Pinterest recipe find is a peanut butter and chocolate treat with an added bonus…pretzels! Another thing that I just love to munch on, especially when paired with either peanut butter or chocolate…or both! I made this as a sweet treat to take to our Labor Day gathering and it was a big hit.
PINTEREST FIND: Peanut Butter Pretzel Bites
INGREDIENTS:
1 cup creamy peanut butter
2 tbsp softened butter (I use light to lessen calories and fat)
1/2 cup powdered sugar
3/4 cup brown sugar
1 bag semi-sweet chocolate chips
Mini pretzels
Beat peanut butter and butter together until well combined. Scrape down the bowl, add sugars and beat until well combined again. You should now be able to roll the mix into balls using your hands. If it’s too sticky, add some powdered sugar. Roll the mixture into 1 tsp balls and place on wax paper-covered cookie sheet. Sandwich the balls between two pretzels and place in freezer for 30 minutes. In the meantime, melt the chocolate in a metal pan over a pot of simmering hot water. Stir occasionally until completely melted and smooth, and remove from heat. Dip each pretzel sandwich into chocolate and place back on cookie sheet. Chill in refrigerator until chocolate is set. Makes about 60 sandwiches.
FINAL REVIEW: Like I said above, these were a big hit at our Labor Day gathering. They’re so easy to just pop in your mouth and enjoy as a snack or dessert. They were also fairly easy to make with minimal ingredients. The most challenging part was creating the peanut butter mix. Maybe because I was using a standard hand-held mixer instead of the suggested stand mixer, but it took a little extra softened butter to get my mix to a good consistency (not too dry). I’ll definitely be making these again, especially as a holiday treat!

We are not a stoic couple and did not want posed (or trying-too-hard) photos! Jessica was able to capture our personalities and the elegance of the day! I can't stop looking at our photos!

The best decision I could have made for my wedding was hiring Jessica Fike as a photographer! I was in a wedding prior that she was a photographer for and seeing how organized and easy and strategic she was to work with is what convinced me! She makes you feel so comfortable and helps teach you how to pose and smile and look so natural! She keeps you on schedule throughout your day and captures so much emotion in her photos. She is worth every penny plus more!
