It’s cold, rainy and wintry outside so I feel like eating soup! Good thing I have Pinterest. 🙂 Here’s a super easy potato soup recipe I just found last week. Because it’s so easy and includes many ingredients I already have, I knew this recipe would get made quickly.
Easy Crockpot Potato Soup
INGREDIENTS
1-30 oz.-ish bag of frozen shredded hash browns (I used the 26 oz. bag of generic brand)
3-14 oz. cans of chicken broth
1 can of cream of chicken soup (I used the 98% fat free generic brand..saving calories and money!)
1/2 cup chopped onion
1/4 tsp ground pepper
1 package cream cheese (I used low fat, it’s suggested that you don’t use fat free because it won’t melt)
INSTRUCTIONS
1. In a crockpot, combine everything but the cream cheese.
2. Cook for 6-8 hours on low.
3. One hour before serving, add the cream cheese and keep heated to melt thoroughly (stir a few times throughout the hour to help the process).
4. Serve with sour cream, bacon bits, green onions, or shredded cheese.
BOOM. DONE. Don’t ya love it? Moms, you can definitely stick this in the crockpot and be worry-free the rest of the day!
It’s not much to look at, but it’s pretty satisfying.
FINAL REVIEW: I definitely recommend this recipe if you’re a potato soup lover! There’s nothing complicated about it and it can be a low-fat, low-calorie meal. The only real work involved was chopping the onions, so it’s definitely a recipe that just about anybody can put together. The flavor wasn’t super salty and the texture wasn’t super creamy, which was nice because I could eat more than one serving. Throwing some bacon bits or shredded cheese on top would certainly change that and spice things up a bit. I’ll be eating this soup for lunch for the rest of the week because it makes a lot!

The best decision I could have made for my wedding was hiring Jessica Fike as a photographer! Ah, good choice! I used to love making this recipe before I went dairy free! Wish I could find a way to do it without the cheese and cream cheese and have it taste just the same 😉

Ah, our fridge is on the fritz. It was creating this on again/off over again typing sound from the rear non-stop & then slowly quit keeping stuff cold.
